There are two issues at play here. Firstly, should the shop admit this isn't a great mount and compensate you, yes. Given the general suing culture in the states, I'm somewhat surpised they arent bending over backwards to fix this. That said, even seeing the skis I think these responses are important to hold onto.
If you end up skiing these and you can put it out of your head, I very much doubt you will notice. It's not a great mount and it's on an expensive and beautiful ski. But I would be shocked if you swap feet /skis over a few times and especially if you blind tested, you could feel any difference. If it's 1-2mm difference either side, which is what it looks like, I have seen very good (aka pro) skiers ski much worse and never notice.
