I know a buddy who traps, then turns critters into super warm over mitts. Sewing leather is extremely difficult, even with a industrial sewing machine.
For water proofing get snow seal and rub it into your leather gloves. If your super careful you can warm them up in a oven. Just don't drip snow seal in the hot oven. It will smoke bad.
I would highly recommend double up on aluminum drip sheets.

It was mentioned before but you can't sew it easy, most machines won't be able to do it so you'll likely end up doing it by hand.
