Center mounting?

Im getting new fujis with look p10's should i center mount them and i have the old volkl V's and i had the the place i ski at mount them and they put my bindings on each side the the little logo but it isnt in the middle of the ski there back further so whats the difference.

 
Any ski I ride, I center mount. Fuji's have a specific flex pattern, so I dont think its too wise to center mount them. Probably the one reason I wont buy them is because of that.

And when I say center mount, I mean the exact center of the ski, the midpoint between nose-tail. Sometimes annoying cause I've had 2 occasions where a shop just ignored what I said and mounted it wherever.
