Well I'm bored, can't walk right now, and have decided to share with you a recipe for a good lunch. Episode 1 refers to the fact that I'm having knee surgery next week and may very well, while on post-op drugs, make an episode 2.

Todays lunch:

Bruschetta on Cheesy Garlic Bread Sandwich. (single/double serving)

To make the bruschetta, mix the following:

-1 tomato, diced

-a dab of balsamic vinegar

-just enough extra virgin olive oil to make it a bit wet

-1/2 clove of garlic (less if you don't like garlic)

-Salt and Pepper (to taste)

For the garlic bread, mix:

-1 tablespoon of butter or margarine and melt it in a bowl.

from the melted butter, mix in:

-1/2 tablespoon of olive oil (regular is fine, extra virgin isn't necessary because it'll burn off it's virgin-ness in the oven)

-a healthy dose of garlic powder (depending on your love of garlic)

-a few sprinkles of parsley

~This should be, once mixed, a nice creamy sauce.~

For the sandwich:

-Preheat your oven to 400 degrees-

-Take a roll, cut it in half

-spread garlic sauce on both sides

-sprinkle mozzarella cheese on both sides, leave apart

-throw in oven for 10 minutes or until cheese is golden brown

-put bruschetta on it, close it up, and eat like a sandwich.

Fuck that sounds so delciou. I juts came home from school and theres absoultly nothing to eat at home arggggh.
 
Also, the bruschetta can be improved by chopping the garlic pretty

roughly, then pressing the garlic pieces into the bread via spreading

with a knife (just like butter). Also, grill the bread with some olive

oil and thyme if you have a grill plate, or a george forman.

Easy Homemade Salsa:

You'll need:

3 Roma tomoatoes

1 large shallot

2 cloves garlic

1 lime

1 Jalapeño pepper

Chop the garlic and shallot very fine. De-seed the pepper unless you want it to be balls spicy, and then chop with the tomatoes into 1cm chunks, or to preference. Mix, then squeeze the lime over it. Amazingly tasty on anything mexican.

 
yup, when I eat bruschetta normally, that's what I do. I thought I'd add the garlic bread for the sandwich aspect.

I actually use my gas grill for the bread, though and make it with baguette.
 
I'm not very adventurous when it comes to breakfast, sorry! I hate breakfast food so the most 'exquisite' breakfast food I eat are omelets with roasted red peppers and salsa.
