I don't know where this 'breaking in' concept came from. It's total bunk.
What you should do to your skis before their first go is age them properly. Find an appropriately dark, cool and moist place, like a basement. Lean the skis against a surface at a 30 degree angle. Let sit, turning 45 degrees every 4 months for two years. I've aged some pairs longer to great results, all depends on the materials, moisture content and ambient temps. Don't freak out about rust, it's natures preservative, and what a file can't take off, an angle grinder will. Remember, it's not about having fun, it's about keeping your most valuable possessions locked away in your cellar and seeing then three times a year.
