What would you guys recommend to someone who doesn't know anything about bluegrass but is interested in giving it a listen?

Really depends but I'll throw you a couple different things
Blue Highway is good for a modern bluegrass band with a real traditional sound and good songwriting,
Blue highway - Gravel Yard
Trampled by turtles - Drinkin in the morning. One of there og songs
TBT- Wait so long. Newer jam and probably most popular if you're looking for something a little faster.
Greensky - Old Barns
Greensky - Burn them. This is a sweet video.
Billy Strings - Meet Me A The Creek
Railroad Earth - Mighty River
Jimmy Martin - Freeborn Man
Also can't go wrong with Earl Scruggs, Del Mccoury, idk so much good shit out there.
Also plenty of shit in an out of the genre that I think is good. I dig traditional bluegrass, still go to some old timey fests when I find em, but generally listening to more a blend of newer stuff, some that isn't even technically bluegrass.
Idk it's all what you dig. Nothing better than a bluebird day dancing barefoot in the dirt or grass, with that bass cranked up on a killer bluegrass show. I think live is when I most enjoy the more traditional bands. I would recommend checking out some sort of bluegrass in the day if you get the chance.
I suck at remembering things but those are a few that I think you might in joy. If not it's all good.
