People think UVM is huge? It's decent sized, but far from huge. As far as quality of education, it could definitely be better for what you are paying to go. Professors are hit or miss from what I have seen. The Rubenstein professors are excellent though, I have only taken 2 business classes so I can't really say how the professors are overall, but the econ department also has some excellent professors. I am majoring in rec management and minoring in business. I love it so far, you should definitely incorporate business into your education, but the rec management program is awesome. You can go into so many different careers with it, basically anything to do with recreation, tourism, hotel management, marketing, landscape architecture (one of the best classes I have ever taken), etc. Not really too much outdoorsy stuff, that would be more forestry or natural resources.
I wish I was smart enough to major in engineering, I don't think I would have been able to stay with it.
