here it goes:

1. your favorite beer

Always changing but right now it would have to be Rouge Imperial Stout but it's not a cheap beer by all means, but it is my favorite currently, past favorites include Great Lakes Nosferatu, and Great Lakes Black Out Stout

2. price you would pay for beer

good beer I top out at about $10 for a 4 pack but I will splurge occasionally and get a big beer "like the Imperial Stout above" that run about $12 for a bottle or so.

3. what kind of beer do you like (pale ale...etc)

Imperial Stout, IPA, Stouts, Lagers, Pilsners, red ales, ales, really all of them.

4. do you like other flavors in your beer (cherry wheat, lime that kinda thing)

Not really, occasionally I will have a Linenkugel Sunset wheat (tastes like Fruity pebbles) or a Blue Moon with an Orange, I abhor the abomination that is Bud lime and the other pre-limed beers on the market and on that note I can only drink Corona with a lime when on the beach during the summer. Beer should taste like beer, not like candy. Also do not make a beer that tastes like Green tea with a hint of beer and alcohol in it, if you are going to make alcoholic tea, market it as such, don't market it as a beer.

Bottles, they suggest an image that would be worthy of a decent price point

6. would you rather pay for good beer or buy cheap mediocre beer

I would rather pay for good beer to sip on. That being said my fridge is usually stocked with Schlitz, Icehouse, Black lable, nati ice, and Mickey's

If you are truly going to start a company, I would assume your only true and viable option would be to go for the microbrewery route and make a few select styles and then sell them as a premium beverage, which would push you up market into the real of those who drink for taste and not those who drink to get drunk. That being said I would focus on bottled specialty beers that would be in teh price ranges I listed (which is why I said them) Also, if I were you and looking at starting a brewing company I might do some home brew before i started a couple times so that I can get a hang of the process. My house homebrews and the process is much different then I originally thought and it's a lot of waiting .

Just some thoughts and good luck with your endevors

And on the thought of a Hard Cidar, I would skip it personally, the only cidar I like to drink with alcohol has copious amounts of Rum involved.

Not to shoot down your dreams cause I would like to open a brewery as well, but you guys are years away from being able to open a successful brewing operation. I have been homebrewing for over a year, and I am still nowhere near proficient enough to consistently create good, original recipes and brews. My advice would be to start homebrewing right away. You will learn the basics quickly, and its a great hobby. However, to become an advanced brewer it takes awhile and you have to know a little bit about what chemical/biological processes are taking place. I reccommend picking up a homebrewing book as well, it will act as your brewing bible. Best of luck man.

2. college forces me to buy cheap beer but ill pay for something decent like Heineken if i have the money.

4. not a huge fan of really fruity stuff but i like when it just barely has a hint of fruit if its an ale

7. you should consider 40's. there always a good bang for your buck and you feel like a G!

4. Tap! Otherwise bottles (but not clear ones because it is easier to be light struck that way)

realised i missed a question,

4. don't like any other flavours in beer! eg, lime or other citrus....(although i have not tried porter for the chocolate kinda flavour it is supposed to get)

Ciders and dark stouts

I like my beer, beer flavored

Cans=shit, Bottles are the way to go

I would rather pay more for good beer than less for crap

 
I am also a homebrewer and i second those sediments. homebrewing isnt the only way to get started but most of the craft brew companies that are mentioned in this thread have roots in home brewing (except new glarus). UC Davis has a program in brewing so maybe check that out.

I cannot resist abeer thread so here you go:

1. Surly Furious (this beer will blow your mind if ever in minnesota buy it)

2. I payed 12$ for a six of hop slam...thats about as expensive as ill go

3. west coast style IPA's/DIPA's, Belgain Strong ales, Belgain Wits, Hefeweizen, cezch pilsners, stouts etc.etc

4. Dont fruit the beer. jk. New glarus Belgain Red is a lambic -ish cherry ale that is the single greatest fruit beer made. period. end of story. also I am into coffee beers (coffee stouts, surly coffee bender, New belgium giddyup) I also like chocolate stouts I had a coconut chocolate stout once that was really good.

5. Cans. seriously. they block all the sunlight & prevent oxydation (skunkyness)

6. good beer

7. If you love beer but maybe decide that a brewery isnt the way to go I would suggest opening a Beer Bar with an extensive list of local and regional beers on draft. There are several here (minneapolis) and they seem to do quite well.

No fruit does not belong in beer. There are a couple Lambics at are ok but you should not focus on that market

good beer. You will not be able to complete with the big boys for mediocre beer
