there is a chart at your local ski shop, they tak into account your height, weight, skier ablity and boot sole lenght. go use it and have your bindings tested if you think there is something wrong. i'm 5' 9" 155 on a 27.5 boot (can't remember the mm lenth) and on a type 3 skier i'm at 7 1/2...

have you measured to see if they are not center you said that they are close..... so i would actually measure the skis true center and see how close they were.

siffers skis are going to a bit harder to handle for vs a softer ski. i love my moship Ti's (alot stiffer then the flights) but if i was starting out i would much rather have a softer ski, also you you love the fattyness of the moships.
