Sport Chalet as a chain carries some really good boots and bindings. It depends on which store you go to though. They can transfer just about anything you'd ask for into the store within a couple days.

The problem with the ratings is that the majority of the companies rate their waterproof and breathabilities with the prewashed measurements. Helly (which really doesn't make sense in my opinion) rates their garments after they have washed them. Therefore the measurements don't really match up...

Yes you can mount them upside down and ride on the topsheet. A lot of manufacuturers are putting ptex topsheets on their skis just for this purpose. hahahaha
